Muscadines…

It dawned on me today – that by the time Fall comes around I am going to be drowning in a sea of muscadine and scupadine grapes.  Surprisingly, spell check doesn’t even know how to spell these words, and I certainly don’t know how to tell the difference between the two, having said that, my grandparents had HUGE muscadine vines when I was growing up, and I just LOVED the sweet flavor in each one of them…I KNOW…you either love ‘em or hate ‘em, but I am making it a personal mission to be ready when they come bursting off the vines to turn them into the most delicious jellies and jams that even a true hater can’t refuse.

I have fallen completely in love with the constant challenges of life on this little farm and I would love any tips or ideas (even recipes) that any of you may like to share on how to can and preserve all of these gifts that pop up around here every single day.
